Prosecco, the quintessential wine of Italy’s Veneto region, is crafted in the province of Treviso within the DOC zone, spanning the morainic hills and the alluvial plains. Whole grapes are gently pressed in a pneumatic press, with the fresh must transferred to temperature-controlled tanks to preserve its delicate aromas. Selected Villa Sandi yeasts initiate fermentation at a cool 15–16°C, enhancing the wine’s fresh, fragrant character. Once the desired balance of alcohol and sugar is reached, fermentation is halted by refrigeration, followed by a short settling period before bottling.

The result is a vibrant, elegantly sparkling wine — perfect as an aperitif, alongside savoury nibbles, or paired with tender steamed shellfish.
