Tomfoolery Son of a Gun Cabernet Shiraz

Hand-picked at optimal ripeness, the fruit is gently destemmed to preserve whole berries and open-fermented for a minimum of five days, with twice-daily pump-overs to maximize oxygenation and fermentation purity. Once dry, the wine is gently basket-pressed to avoid harsh tannins.

Matured for 12 months in seasoned French oak barriques, this wine offers intense Shiraz bramble fruit with a lifted, herbal Cabernet backbone. Ripe, supple and satisfyingly full-flavoured, it is a quintessential Barossa Claret — perfect with rich, gamey dishes.
