In brand-new, 225-liter barrels made of fine-grained French oak, chardonnay is fermented. After fermentation is complete, the wine is matured in barrels for up to three months while undergoing gentle batonnage to increase the wine's complexity. 16 ° C is the optimal temperature for fermentation. aged for a minimum of 36 months in stacks.
Aroma is strong and complex. a blend of mild, varietal roasts and fruity flavours from varietal chardonnay, all over a bed of barrel-aged aromas. The wine's fruitiness dominates the tongue, which is well structured and pleasant with a really intriguing vanilla aroma. It has a crisp, mineral flavour in the tongue that comes from the pinot, which completes the mix.
