A stunning 60/40 blend of Chardonnay and Pinot Noir, this biodynamic Tasmanian sparkling spent an extraordinary 11 years on lees. The nose exudes lemon peel, honeysuckle, mineral and honeycomb aromas, while the fine bead and creamy mousse set the stage for a beautifully poised palate. Bright notes of lemon, jazz apple and winter nectarine glide through layers of hazelnut meal, honey nougat and marzipan. Elegant and deeply complex, it’s drinking superbly now yet promises even greater reward with time in the bottle. Certified biodynamic since 2013.
