Soumah Crescent Moon Methode Traditionnelle Brut

Crescent Moon is an elegant sparkling blend of 55% Pinot Noir and 45% Chardonnay, handpicked from the Upper Ngumby and Hexham vineyards. Crafted in the traditional method, the base wine undergoes a cool first fermentation in tank to preserve purity of fruit, followed by secondary fermentation in bottle and four years of lees aging. Disgorged with a dosage of 5.5g/L, this brut cuvée reveals a fine, delicate bead, vibrant citrus and peony florals, and a rich undercurrent of baked brioche. Perfect as an aperitif, or paired with freshly shucked oysters or light rice paper rolls.
