Six Acres Silvan Cabernet Sauvignon

Our pioneer Cab Sauv, which was planted in 1999, provided the grapes for this wine.
The grapes are now at their peak of maturity and generating some amazing flavours and complexity that once made Yarra Cab king. We believe we are now able to make a wine worthy of the reserve classification.
Two tonnes of hand-selected material were divided among three fermenters with various treatments. One had stems added to the base of the fermenter, one had stems completely destemmed (to emphasise the fruit forwardness), one had stems completely crushed (to contribute grape tannin for structure), and one had stems completely added to the fermenter. After pressing, the wines were combined and matured for 18 months in French oak barriques (10% new).
