A blend of premium Pemberton Pinot Noir (68%) and Chardonnay (32%), the fruit is 100% hand-picked and whole-bunch pressed, capturing only the finest cuvée juice. The wine undergoes extended cool fermentation, followed by lengthy lees ageing to build depth, texture and complexity.

The bouquet is beautifully layered, combining fresh red apple, lemon and citrus curd with classic sparkling wine characters of brioche, toast and flinty minerality.
