Singlefile Great Southern Rose

This is a more serious, dry, Provence-styled rosé made from the Mediterranean sangiovese grape. The Mediterranean varietals have proven to be well suited to this style of rosé, where balancing fruit flavour, savouriness, natural acidity, and colour is essential. The grapes were selected, destemmed carefully, and crushed directly into the press, with roughly two hours of skin contact prior to a light press. The free run juice was handled oxidatively and allowed to settle on full solids for five days before rough racking and the addition of an indigenous yeast to begin fermentation. After a slow cool fermentation, the wine was rested on its lees in a stainless steel tank for three months before bottling.
