Patrick Sullivan Chardonnay

Sourced from the Limestone Coast vineyards of Mount Gambier, Coonawarra and Wrattonbully, this Chardonnay celebrates the region’s volcanic soils, combining vibrant fruit, minerality, and refined richness. The shallow volcanic topsoils over limestone and basalt, part of the world’s third-largest volcanic plain, imbue the wine with a unique sense of place, reflected in Patrick’s sophisticated, terroir-driven style.

Whole-cluster crushed and pressed, the juice was settled before primary fermentation in a combination of barrique and tank, with approximately 25% new oak. The nose opens with lime, lemon and grapefruit, followed by white peach and subtle spice, layered with hazelnut, vanilla custard and lightly buttered toast. The palate is vibrant and precise, framed by zesty acidity and bright mineral notes, with nuanced oak adding depth and a touch of crème brûlée richness — fresh, concentrated, and beautifully balanced.
