About This Wine:

Established in 1995, Paramoor Winery is located in Glenhope at elevations between 450–485 metres, where cool-climate conditions allow for slow, even ripening and refined fruit expression. Granite, sandy loam and volcanic ash soils provide excellent drainage and a distinct mineral edge, while a minimal-spray approach promotes strong vineyard health and biodiversity. A quietly impressive site, Glenhope continues to deliver fruit of remarkable purity and unexpected quality.

Hand-harvested and gently crafted with 100% wild yeast fermentation, this Pinot Noir sees natural malolactic conversion in barrel and 12 months in French oak (20% new), with approximately 25% of the wine fermented with whole bunches to enhance texture and aromatic complexity.

Initially supremely ripe and bright, the nose opens with confectionery-like charm, gradually revealing deeper red cherry, strawberry and sour cherry notes, accented by pepper and a hint of stemminess. On the palate, silky texture and lively acidity carry the fruit effortlessly, while subtle savoury layers emerge with aeration. Structured yet approachable, this Pinot promises further evolution over the coming years, offering both immediate pleasure and rewarding cellaring potential.
