About This Wine:

Established in 1995, Paramoor Winery is located in Glenhope at elevations between 450–485 metres, where cool-climate conditions allow for slow, even ripening and refined fruit expression. Granite, sandy loam and volcanic ash soils provide excellent drainage and a distinct mineral edge, while a minimal-spray approach promotes strong vineyard health and biodiversity. A quietly impressive site, Glenhope continues to deliver fruit of remarkable purity and unexpected quality.

Originally intended for blending, this parcel quickly proved its standalone pedigree. Fully destemmed and wild fermented, the wine undergoes natural malolactic fermentation in barrel before spending 14 months in seasoned neutral French oak, allowing purity and site expression to shine.

Deep crimson-purple in the glass, this Malbec is both perfumed and powerful. Aromas of blackberry compote, black cherry and ripe plum unfold alongside subtle cedar, dried mountain herbs and a hint of graphite. The palate is medium to full-bodied — plush yet finely structured — with polished tannins and a vibrant acid line bringing balance and precision. Concentrated without excess, it delivers immediate appeal while promising graceful evolution in bottle.

A natural match for chargrilled ribeye or scotch fillet, where the wine’s dark fruit depth and structure beautifully frame the richness of the meat.
