Paramoor Cabernet Franc

Established in 1995, Paramoor Winery is located in Glenhope at elevations between 450–485 metres, where cool-climate conditions allow for slow, even ripening and refined fruit expression. Granite, sandy loam and volcanic ash soils provide excellent drainage and a distinct mineral edge, while a minimal-spray approach promotes strong vineyard health and biodiversity. A quietly impressive site, Glenhope continues to deliver fruit of remarkable purity and unexpected quality.

Originally destined for blending, this parcel proved too compelling to hide — emerging as a beautifully pure and expressive Cabernet Franc. Fully destemmed and wild fermented, the wine undergoes natural malolactic fermentation in barrel before resting for 14 months in seasoned neutral French oak, allowing character and finesse to take centre stage.

Perfumed and varietally true, it opens with lifted aromas of redcurrant, raspberry and wild strawberry, intertwined with crushed black pepper, violet florals and a gentle herbal lift. The palate is bright, juicy and energetic, driven by vibrant red fruits, fine silky tannins and a supple acid line. Savoury nuances build through the mid-palate, leading to a spice-laden finish that lingers with impressive poise and freshness.
