Olivier Leflaive Saint Aubin 1er Cru En Remilly

Olivier Leflaive, once co-manager of Domaine Leflaive, founded his own maison in 1985, later devoting himself fully to it after 1994. This wine hails from the historic terroir of Saint-Aubin—once devastated by phylloxera, but revived in the 1970s. Nestled near Montrachet, the site is naturally protected from frost and benefits from limestone soils that retain the day's warmth into the night, contributing to the wine’s flinty, mineral drive.

Made from 100% whole bunches, the juice undergoes 24 hours of static settling before both alcoholic and malolactic fermentations take place in oak barrels (15% new). The wine matures for 12 months, including a final four-month élevage in stainless steel to preserve purity and freshness.

Elegant and finely poised, it opens with aromas of white flowers and acacia. The palate is fresh, delicate, and laced with minerality, offering finesse and precision in a dynamic, polished style.
