About This Wine:

 

Moss Wood Ribbon Vale Cabernet Sauvignon is a richly layered Bordeaux-style blend that combines power, complexity and the hallmark balance of Margaret River Cabernet. Hand-harvested fruit was carefully sorted and fermented in small batches, with Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Malbec fermented in open tanks with regular hand plunging, while Merlot underwent a cold soak before fermentation to enhance softness and fruit depth. Multiple yeast strains were used throughout to build aromatic and structural complexity.

Following malolactic fermentation, the wines were matured in French oak barriques, with 19% new oak used for the Cabernet Sauvignon component. After blending, the wine returned to barrel for extended ageing, spending a total of 26 months in oak before bottling unfined to preserve texture and character. The final blend is led by 90% Cabernet Sauvignon, supported by small portions of Cabernet Franc, Merlot, Petit Verdot and Malbec.

Deep crimson with brick red hues, the nose is intensely expressive, driven by blackberry, mulberry, blackcurrant and plum layered with notes of blueberry yoghurt, Black Forest cake, dark licorice and jubes. More savoury complexity emerges with air, revealing violets, cedar, tobacco, tar and subtle toasty oak.

The palate is full-bodied and plush, packed with concentrated flavours of cassis, blackberry, boysenberry and dark cherry. Layers of black olive, licorice, dark chocolate, vanilla custard, cedar and warm spice add further depth and sophistication. Fine tannins and vibrant acidity are beautifully integrated, carrying the wine with structure and freshness while maintaining a smooth, generous mouthfeel and long, polished finish.
