Moss Wood Cabernet Sauvignon is a benchmark Margaret River Cabernet, crafted with the precision and balance that have defined the estate for decades. The fruit was hand harvested, hand sorted and fermented in small open fermenters, with each parcel handled separately to preserve vineyard character. Multiple yeast strains were employed to build complexity, while careful extraction and extended skin contact enhanced depth and structure. Following malolactic fermentation in stainless steel, the wine matured in French oak barriques, with 15% new oak providing subtle support without overshadowing the fruit.
The final blend of 92% Cabernet Sauvignon, 4% Cabernet Franc and 4% Petit Verdot captures both concentration and finesse. Deep brick red in colour, the wine opens with classic Cabernet aromas of blackberry, blackcurrant and mulberry, lifted by hints of plum and red currant. Beneath the fruit lies a layered savoury complexity of tobacco leaf, cedar, graphite, leather and olive, while restrained oak contributes gentle spice and toast.
The palate is full-bodied and finely structured, carrying rich flavours of cassis, blackberry and blueberry framed by darker notes of chocolate and spice. Firm yet refined tannins give the wine shape and longevity, while vibrant acidity maintains freshness and precision throughout. Seamlessly balanced and deeply expressive, it shows all the hallmarks of a classic Moss Wood vintage.
Although already approachable in its youth thanks to generous primary fruit and polished tannins, this wine is built for long-term cellaring. Over time it will evolve further savoury complexity and classic mature Cabernet characters, with an exceptional drinking window expected to extend well beyond 2043.
