About This Wine:

Levantine Hill Levant Pinot Noir is a vibrant and structured expression of Yarra Valley Pinot Noir, combining generous fruit intensity with savoury complexity, fine acidity and firm tannin.

The fruit was hand-picked and meticulously sorted, mostly destemmed before being fermented in open fermenters, with around 15% whole bunches retained to add structure and aromatic lift. Each parcel was fermented and matured separately before being blended from thirteen individual open fermentations. Natural fermentation was initiated with endemic yeast, followed by a varietal yeast to complete fermentation, with the wines spending 7–15 days on skins before short maturation in large French oak foudres and 500-litre puncheons.

The bouquet is expressive and layered, bursting with black cherry, summer pudding, cola and tangerine, alongside hints of cassia, shortcake and white chocolate over a subtle steely mineral note. The palate is juicy and full-flavoured, delivering vibrant red cherry, plum and rhubarb with impressive depth and concentration.

Far from a shy or delicate Pinot, this is a confident, powerful and beautifully poised style, with weighty fruit framed by firm, fine-grained tannins and lively acidity. Long, structured and generous, it combines the elegance of Pinot Noir with a distinctive sense of Yarra Valley intensity.
