Jasper Hill Emily's Paddock Shiraz Cabernet Franc

From Jasper Hill's smallest and most distinctive site, the east-facing Emily’s Paddock (2.7ha), comes a wine of power and poise. Low yields ensure intensity, while co-fermentation of Shiraz with 7% Cabernet Franc brings aromatic lift and layered complexity. Wild yeast fermentation on skins for 5–6 weeks, followed by gentle pressing and 12 months in French oak.

The result is a full-bodied wine that seamlessly marries red and black fruits with notes of graphite, leather, woody spice, and a hint of mint. Fine natural acidity gives energy and lift, while the structure—anchored by firm, savoury tannins—promises a long and graceful evolution. Compelling now, with great rewards for the patient.
