Greywacke Chardonnay

The fruit was hand-picked at optimal ripeness and whole-bunch pressed with minimal maceration to preserve delicacy. A portion went straight to barrel; the rest was lightly settled before racking to French oak barriques (20% new). Fermentation was carried out by indigenous yeasts, unfolding slowly over several months. The wine underwent full malolactic fermentation with occasional lees stirring, then matured in oak for 11 months before bottling in October.

A vibrant bouquet of citrus—lemon zest, grapefruit, and tangerine—intertwines with hints of crème anglaise, praline, and a flicker of flinty minerality. The palate is richly textured, echoing lemon curd on buttered brioche, lifted by savoury tarragon and ripe stone fruits. Subtle toasty oak and racy acidity give the wine structure and poise.

Elegant yet powerful, this is a layered, concentrated white that delights now but will reward cellaring as it slowly reveals its full complexity.
