Giant Steps Applejack Chardonnay

Hand-picked and whole bunch pressed, this Chardonnay was transferred directly to barrel by gravity without settling, retaining full lees for added depth. Fermented naturally in 500L French oak puncheons and matured for ten months in a mix of new and seasoned oak (15% new from Mercurey, Taransaud and Dargaud & Jaeglé), it captures the essence of the Applejack vineyard—just two of its eleven hectares are planted to Chardonnay. Bright green-gold in the glass, it offers an expressive bouquet of orchard and stone fruits, grilled nuts, white jasmine and a hint of sea spray. The palate is equally complex, combining intensity with precision, finishing long, chalky and beautifully balanced. A remarkable expression of site and craftsmanship.
