Gapsted Victorian Alps Limited Release Pinot Grigio was harvested early in the morning and gently pressed off skins into tank, retaining some solids to build texture and complexity while preserving fresh fruit character. Fermentation was carried out at a steady 16°C over three weeks, with a small portion using wild yeasts to add palate richness and dimension. The wine matured on lees with weekly stirring, enhancing complexity while maintaining freshness.

Lifted aromas of citrus, green apple and nashi pear lead to a crisp, almost crunchy palate, balanced with subtle spice and texture. True to style, the finish is clean, zesty and refreshing.
