Don't Tell Gary Chardonnay

Harvested at peak ripeness in the cool of night to preserve natural aromatics and acidity, this wine was crafted with minimal intervention. The grapes were gently pressed, and the juice fermented to dryness in a selection of first and second fill French oak barrels. Partial malolactic fermentation retained vibrant acidity, balancing the wine’s richness and oak complexity. Each barrel was individually selected to create the final blend.

The nose offers layered aromas of ripe citrus, pineapple, biscuit and delicate floral blossom. On the palate, it’s richly textured from extended lees contact, with a harmonious interplay of creamy depth, bright citrus fruit, and a long, focused finish. A beautifully poised, elegant white with both power and finesse.
