Dominique Piron Beaujolais-Villages

Piron's Beaujolais Villages collects the greatest Beaujolais villages. The crus are surrounded by grapes on the slopes of northern Beaujolais. These vines are on average 50 years old.100% Gamay grapes are collected by hand, selected on a sorting table, and destemming (80% of the bunches) is done gently before fermenting in cement and stainless steel. To maintain freshness, lightness, and fruitiness, fermentation is limited to 8-10 days. When selecting cuvées for the final blend, wines with luscious fruit, complexity, and exquisite structure are preferred above the simpler straight Beaujolais.
