Domaine des Carlines Cotes du Jura Pinot Noir

From 40-year-old vines in the heart of Château-Chalon’s hillsides—shielded from the wind and rooted in a mineral-rich terroir—this Côtes-du-Jura red captures both strength and finesse. Destemmed by hand, it underwent a cool three-day maceration, natural fermentation with gentle daily remontage over 20 days, then aged eight months in seasoned 500L and 228L casks before a short rest in stainless steel. Bottled unfined and unfiltered.

In the glass, it shows an elegant purple hue. Aromas of violet and blackberries lead to flavours of blackberry jelly, pepper, and subtle spice. The tannins are fine and silky, the finish long and poised. Beautifully suited to quail, grilled red meats, or a platter of cheeses and charcuterie.
