Domaine Baudouin Millet Petit Chablis

Domaine Baudouin Millet is a family-owned estate based in Tonnerre, just east of Chablis. The property began as a cereal farm run by Philippe Millet in the mid-1960s, before he planted vineyards in the early 1980s on land eligible for Petit Chablis and began producing wine. His son, Baudouin, took full control of the wine operations in 2011, subsequently giving the domaine his name.

Unusually for a Chablis domaine, Domaine Baudouin Millet produces considerably more Petit Chablis than Chablis, with nine hectares located in the far south-east of the appellation around Poilly-sur-Serein. These vines are approaching 40 years of age and were among the original plantings made by Philippe Millet in the early 1980s.

The fruit is picked relatively late by local standards, then fermented and matured in enamel-lined stainless steel tanks, spending around six months on its lees and undergoing full malolactic fermentation. This gentle approach allows the character of the fruit and site to remain front and centre.

Bright and limpid with pale yellow and green highlights, the wine offers an inviting bouquet of fresh citrus and floral notes. The palate is rich and aromatic on entry, with lovely balance and tension, followed by a subtle mineral character that emerges as the wine opens. Fresh, persistent and beautifully composed, it is a Petit Chablis with considerably more texture and depth than its appellation might suggest.
