Domaine Baudouin Millet Chablis

Domaine Baudouin Millet is a family-owned estate based in Tonnerre, just east of Chablis. The property began as a cereal farm run by Philippe Millet in the mid-1960s, before he planted vineyards in the early 1980s on land eligible for Petit Chablis and began producing wine. His son, Baudouin, took full control of the wine operations in 2011, subsequently giving the domaine his name.

The fruit for this Chablis comes from around 30-year-old parcels in Béru and Viviers, planted on Kimmeridgian limestone rich in fossilised marine deposits. Bright and pale in the glass, it opens with vibrant aromas of lemon and green apple, backed by the unmistakable stony minerality of Chablis. The palate is silky and gently textured, combining precise citrus and orchard fruit with salty, chalky mineral energy. Juicy, finely balanced and beautifully tense, it finishes with impressive finesse and freshness.

A classic partner for oysters, trout with fennel or goat’s cheese on toast.
