Hand-picked fruit is whole-bunch pressed and cold settled before fermentation with indigenous yeasts, followed by five months ageing in stainless steel and bottling without fining to preserve clarity and character.

Pale straw in the glass, the nose is refined and lifted, showing elderflower, grapefruit, white peach and pear, underpinned by a gentle smoky flint complexity. The palate is vibrant and refreshing, driven by saline acidity and bright citrus fruit that delivers immediate energy. A touch of fruit sweetness softens the structure, finishing dry with fine phenolics and a clean, mineral line.
