Delamere Vintage Cuvee

Gently whole-bunch pressed and blended while still juice, this vintage Cuvée is an elegant reflection of a remarkable season. The assemblage is classic: 50% Chardonnay, 50% Pinot Noir. Generous solids were included during fermentation, adding depth and complexity, while five years on tirage and a 3 g/L dosage create a luscious, evocative palate.

Nearly six years on tirage, the wine remains beautifully fruit-driven, with Red Delicious apple and fresh lemon at the forefront. Notes of sweet autolysis, reminiscent of fresh croissants, are enhanced by a creamy, mouth-filling mousse. Structural and balanced, with fine tannins and precise dosage, it delivers remarkable length and a crisp, zesty finish.

In its youth, serve with fresh Tasmanian seafood; with age, it pairs beautifully with Peking duck, spatchcock or poached quail eggs. A Cuvée that will continue to develop brilliantly under cork.

"Light straw-yellow tone with a fine bead showing. Poached granny smiths, crushed raspberry and baking brioche aromas. Palate fills with apple and berry fruits while a deep maturity shines through towards the finish with notes of warm sourdough and warming toffee.
