Defialy Rouge!! Cabernet Franc

Whole-bunch, organically grown estate Cabernet Franc from the Candlebark Hill vineyard. Fermented with a small addition of estate Malbec juice, sealed for seven days for carbonic maceration, with a light pigeage the night before pressing. Matured in two 300 L seasoned oak barrels, with just 15 ppm SO₂ added at bottling.

A refined, French-style wine that benefits from a little air — a brief decant brings out its full character. Minimal intervention: wild fermented, unfiltered and unfined, showcasing purity, texture and bright varietal expression.
