Defialy Petit Rouge!! Merlot

Organically grown estate Merlot from the Candlebark Hill vineyard. 100% whole bunch, cold-soaked for four days with a light pigeage the night before pressing. Fermented and matured for 15 months in two 200 L amphorae and one 300 L seasoned oak barrel, with just 15 ppm SO₂ added at bottling.

Striking a balance between a rosé and a light red, it can be enjoyed chilled or at room temperature. Crafted with minimal intervention — wild fermented, unfiltered and unfined — to highlight purity, texture and bright fruit character.
