Defialy Candlebark Hill Pinot Noir

A premium expression of Macedon Ranges Pinot Noir, farmed to organic principles and crafted with precision and restraint.

Fermented with 10% whole bunches and left on skins for two weeks, this wine was then matured in French oak (15% new) for 12 months, followed by two months in stainless steel. A minimal addition of SO₂ was made just before bottling.

This is an elegant, finely structured Pinot with lifted red cherry, raspberry and wild herb aromatics, supported by subtle spice and forest floor complexity. Silky tannins and vibrant acidity carry the palate to a long, poised finish. A beautifully pure and expressive release from Candlebark Hill.
