Defialy Candlebark Hill L'Amphore Chardonnay

Organically farmed from Defialy's own vineyard in the cool-climate Macedon Ranges, this is a strikingly pure expression of Chardonnay.

Whole bunch pressed directly to a 1200L amphora, where it rested on full solids for 12 months before a short two-month stint in stainless steel prior to bottling. Wild fermented, unfiltered and unfined.

L’Amphore is textural and precise, with layers of white stone fruit, citrus zest, flint and faint almond cream. The amphora ageing brings gentle grip and savoury complexity without compromising vibrancy. It's beautifully composed, with tension and finesse — a soulful Chardonnay that speaks of place.
