From Domaine Defialy's Macedon Ranges vineyard, this 100% Cabernet Sauvignon reflects a challenging, low-yielding season. Destemmed and left on skins for three weeks, it matured 18 months in 25% new and older Austrian (Stockinger) oak.

A cool-climate Cabernet with medium body, silky tannins and bright, fresh flavours — a refined luncheon claret. Wild fermented, unfiltered and unfined to showcase purity and texture.
