Defialy Amber Skye

Certified sustainably grown Malvasia (50%), Falanghina (30%) and Muscat (20%) from Heathcote, each variety fermented separately on skins for 2–4 weeks before ageing in a mix of old oak and stainless steel. Unfined, unfiltered and wild fermented, as always.

Defialy’s Amber Skye is a bold, textural and wildly expressive orange blend. Bursting with heady aromatics of orange blossom, mandarin peel, rosewater and spice, the palate layers zesty citrus with stone fruit, exotic florals, a touch of grip and a gentle nutty savouriness. Vivid, lifted and dangerously drinkable.
