Based in Beaune, David Moret has earned a strong following as a meticulous micro-négociant specialising in finely crafted white Burgundy. Working with a small network of trusted growers across premium sites in Burgundy, Moret focuses on sourcing exceptional fruit and guiding it with a light hand in the cellar. His philosophy centres on careful selection, minimal intervention and thoughtful oak use, allowing each vineyard to shine with clarity, balance and precision.
David Moret crafts this Chassagne-Montrachet Vieilles Vignes from old vines over 60 years of age, planted on limestone soils at around 300 metres altitude in Chassagne‑Montrachet. These mature vines deliver naturally concentrated fruit with depth and texture, while the elevated, limestone-rich sites contribute precision and mineral tension. Fermentation is followed by malolactic conversion and maturation in French oak for just over 12 months, with only 25% new barrels used to preserve the vineyard’s character. The wine then rests in bottle for approximately six months before release, gaining further harmony and refinement. Ageing on fine lees adds texture and complexity, while careful vinification maintains purity and freshness.
Pale yellow with bright green highlights, the wine opens with delicate aromas of white flowers, fresh citrus and a subtle mineral lift. The palate is elegant and precise, filling out with layers of toasted brioche, tangerine and ripe citrus, supported by impressive concentration and refreshing acidity. A smooth, rounded mid-palate leads into a saline, persistent finish, showcasing the classic balance of richness and freshness expected from top Chassagne-Montrachet.
This refined and versatile Chardonnay pairs beautifully with line-caught fish such as sea bass or gilt-head bream, roasted free-range poultry, morel mushroom risotto, or aged Époisses. It also shines alongside salmon en croûte, creamy seafood dishes and a wide range of chicken preparations. Serve lightly chilled around 11–13°C, with a gentle decant recommended for younger bottles to fully reveal its layered aromatics.
