About This Wine:

Based in Beaune, David Moret has earned a strong following as a meticulous micro-négociant specialising in finely crafted white Burgundy. Working with a small network of trusted growers across premium sites in Burgundy, Moret focuses on sourcing exceptional fruit and guiding it with a light hand in the cellar. His philosophy centres on careful selection, minimal intervention and thoughtful oak use, allowing each vineyard to shine with clarity, balance and precision.

This Chardonnay is drawn from carefully chosen vineyards characterised by limestone and clay soils, where cool nights and a temperate continental climate help build freshness, aromatic lift and mineral tension. Hand harvesting and strict sorting ensure pristine fruit, followed by gentle pressing and fermentation in French oak, including a measured portion of new barrels. Ageing on fine lees, with occasional bâtonnage, enhances texture and complexity while preserving finesse and purity.

In the glass, the wine shows pale lemon hues with fresh green reflections. Aromas of lemon zest, green apple and pear lead, layered with white blossom, subtle stone fruit and a refined crushed-shell minerality. Hints of butter, hazelnut and delicate vanilla from well-judged oak sit seamlessly in the background.

The palate is finely textured and beautifully balanced, with lively acidity providing drive and precision. Citrus, apple and just-ripe peach flow into gentle notes of brioche and almond, finishing with a chalky, saline edge that speaks clearly of Burgundy. Creamy yet focused, this is a poised, elegant Chardonnay with impressive purity and length.
