Castagna Aqua Santa is a rare and captivating sweet wine from biodynamic Castagna Vineyard in Beechworth, Victoria. Crafted from botrytised Viognier grapes and aged through an evolving solera, it displays vibrant aromas of dried fruit, citrus peel, quince and apricot, layered with honey and subtle walnut notes. The palate is rich yet lively, with a balanced sweetness underpinned by bright, saline‑fresh energy, leading to a long, elegant finish. Generous but refined, it pairs beautifully with rich cheeses or fruit-based desserts, offering a truly distinctive expression of the variety.
