Originally from the Campania region of southern Italy, Fiano thrives in Mediterranean conditions, making it ideally suited to Heathcote's warm days and cool nights. Crafted in a style inspired by fine Chardonnay, this wine places emphasis on texture, complexity and vineyard expression rather than overt fruitiness.

Hand-picked fruit is whole-bunch pressed directly into seasoned French oak barriques for wild fermentation before maturing on full gross lees for six months. The wine undergoes complete malolactic fermentation and is bottled with minimal intervention, using only a small addition of sulphur, without fining and with only light filtration.

The bouquet reveals aromas of ripe pear, preserved lemon, citrus rind and subtle roasted nuts, complemented by delicate saline mineral notes. The palate is generous and textural, offering layers of orchard fruit, savoury complexity and a distinctive waxy mouthfeel balanced by vibrant acidity.
