Don Zoilo Pedro Ximenez en Rama

Don Zoilo Pedro Ximénez en Rama is a wonderfully rich and decadent Pedro Ximénez, made from sun-dried grapes and matured for a minimum of 15 years through the traditional Criaderas y Solera system. The grapes are pressed at high pressure before fortification, with extended oxidative ageing building remarkable concentration and complexity.

Deep black-mahogany in colour, the wine is intensely aromatic, offering classic Pedro Ximénez characters of raisins, figs and dried fruit. The palate is lusciously sweet and beautifully persistent, with a rich, velvety texture and a gentle, low-acid profile that makes it incredibly indulgent.

A natural partner for desserts, ice cream, citrus and red fruits, it is particularly delicious with dark chocolate and blue cheese. Serve lightly chilled at 12–14°C for the best balance between richness and freshness.
