About This Wine:

Amélie Guillot Vin Jaune Savagnin Vieilles Vignes is a remarkable expression of one of France's most distinctive wine styles, crafted with patience, tradition and an unwavering respect for terroir. After relocating from Burgundy to the Jura in 1995, Amélie Guillot established her tiny biodynamic estate in the secluded village of Molamboz, where she hand-tends old vines and produces authentic, classically styled Jura wines with minimal intervention.

Made from old-vine Savagnin, the wine is fermented with indigenous yeasts before ageing for more than six years in old oak barrels under sous voile—a protective veil of yeast that develops naturally on the wine's surface. This traditional maturation creates the extraordinary complexity and unmistakable character that define great Vin Jaune.

The bouquet is intensely aromatic, revealing layers of toasted walnut, roasted hazelnut and fresh bread dough, complemented by dried apricot, preserved citrus and delicate spice notes of cumin and fenugreek. Beneath the richness lies an unmistakable mineral core that gives the wine remarkable precision and lift.

The palate is powerful yet impeccably clean, combining extraordinary concentration with vibrant, mouthwatering acidity. Flavours of roasted walnuts, dried stone fruits, savoury yeast and subtle oxidative complexity unfold seamlessly, leading to a finish of exceptional length, freshness and depth.
