All Saints Estate Shiraz Durif

A full-bodied red showcasing two iconic Rutherglen varieties, this blend combines the plush fruit of Shiraz with the depth and structure of Durif. Handcrafted at All Saints Estate in the original winery housed within its historic castle, the fruit was destemmed and crushed into open vats, then fermented over 20 days with the cap plunged two to three times daily to gently extract colour and tannin. Following pressing in the estate’s original 1883 wooden basket press, the Shiraz and Durif were matured separately for 12 months in French (90%) and American (10%) oak barriques and puncheons, with 30% new oak.

Dark plum and nutmeg spice lead the aromatic profile, while the palate brings bright red-fruit flavours and a fine backbone of long-lasting, chalky tannins. Despite its richness and full-bodied style, the wine retains an elegant structure and a moreish quality that invites another sip. Enjoy now alongside a medium-rare grilled steak, lamb braised with plum sauce or roasted mushrooms, or cellar for up to 15 years to allow further complexity to develop.
