2006 Capogreco Elysium Shiraz

Sourced from the Capogreco vineyard in the Adelaide Plains, this distinctive reserve Shiraz was crafted with minimal intervention and a deep respect for tradition. The grapes were destemmed and crushed, then underwent an extended maceration with wild fermentation on skins to build complexity and texture. Basket pressed and aged gracefully in a mix of stainless steel and oak, the wine was never fined, corrected, or Earth filtered, preserving its natural expression. Sediment and light staining may occur as a result. Clarification was achieved gently through traditional racking and pad filtration before bottling
