2005 Capogreco L'Odissea Cabernet Shiraz

Handcrafted from the Adelaide Plains vineyard, this cellar reserve blend of Cabernet and Shiraz reflects both time and terroir. The fruit was destemmed and crushed, followed by an extended maceration and wild yeast fermentation on skins, drawing out natural depth and complexity. Basket pressed and matured with care in a combination of stainless steel and seasoned oak, the wine has evolved with grace. No fining, corrections, or Earth filtration were applied, preserving its purity. Expect some stain or sediment, a mark of its unfiltered authenticity. Gentle racking and pad filtration preceded bottling.
