About This Wine:

Château Canon 2004 is a beautifully mature expression of one of Saint-Émilion's great estates, renowned for producing wines of remarkable purity, precision and longevity from the region's prized limestone plateau. The 2004 vintage highlights Château Canon's signature balance of voluptuous fruit, mineral freshness and understated power.

A blend of 75% Merlot and 25% Cabernet Franc, each parcel was vinified separately using gravity-fed, temperature-controlled stainless steel vats. Around one-third of the wine underwent malolactic fermentation in new French oak, with the remainder completed in stainless steel before ageing for 18 to 20 months in French oak barrels, 65% of which were new. Traditional egg-white fining and meticulous élevage preserve the wine's elegance and clarity.

The bouquet is refined and complex, opening with aromas of ripe plum, black cherry and blackberry layered with leather, dark chocolate and gentle roasted notes. As the wine evolves in the glass, cedar, acacia blossom, tobacco leaf and subtle orange blossom emerge, adding further depth and sophistication.

The palate is generous yet beautifully defined, with silky Merlot fruit framed by the freshness and structure of Cabernet Franc. Notes of cedar, cocoa, smoky oak and delicate spice are seamlessly woven through a core of dark fruit, while the estate's distinctive limestone minerality provides energy, precision and remarkable balance.

Long, graceful and impeccably composed, the finish lingers with savoury complexity, fine tannins and vibrant freshness. Now at an excellent stage of maturity, the 2004 Château Canon is a distinguished Saint-Émilion that perfectly captures the estate's hallmark elegance, depth and exceptional ageing potential.
