Bodaimoto is an age old method pre-dating even Kimoto method. Omachi rice is considered by many the best rice for sake. Together a formidable combination. Tart kumquat & apricot present but with a lactic and nutty character. This is named 1859 to commemorate the year that the Omachi rice was rediscovered.
