About This Wine:

Dr Edge Tasmania Pinot Noir is a blend of 70% Derwent Valley and 30% Tamar Valley fruit. Each parcel undergoes various whole-cluster inclusions and a playful mix of hand, foot, and even "bum" stomping maceration before being crafted into the Dr.'s signature style. Using the Pied de Cuve method, natural yeasts kick off fermentation, with the wine then aging for 9 months in old oak casks before being bottled unfiltered and unfined.

This bright, bunchy Pinot is brimming with vibrant notes of raspberry, red cherry, and wild strawberry, intertwined with exotic spices, rosehip, citrus blossom, amaro, and hints of pressed wildflowers, dried meats, and cranberries. On the palate, it’s chalky and savory, bursting with sour cherry, layers of spice, and twiggy nuances, all carried by a briny freshness. The finish is taut and vivid, echoing with impressions of leaf litter and meaty red fruits.
