Set among fig, olive and peach trees, the vines grow in red loamy clay with ironstone over deep limestone. Hand-picked across two picks just under two weeks apart, with two-thirds coming from the second pick, the fruit spent 12 days on skins with 60% whole bunch before four months in seasoned French oak. Unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eLifted and strikingly fragrant, the bouquet weaves together plum compote, fragrant spice, white pepper, thyme and a savoury bouillon-like character. The palate is opulent yet nervy, with a medium-bodied, savoury feel that almost recalls Pinot Noir. Pomegranate and lingonberry bring bright, tangy fruit, while finely grained tannins and a wonderfully textural palate give the wine depth and shape.
