Inspired by founder John Kirk’s love of the wines of Châteauneuf-du-Pape, it brings together six varieties traditionally associated with the Southern Rhône: Grenache (55%), Mourvèdre (26%), Shiraz (7%), Counoise (6%), Cinsault (4%) and Roussanne (2%). Grenache leads with its fragrant red-fruit character, while the supporting varieties add layers of savoury complexity, spice and structure.\u003c\/p\u003e\n\u003cp\u003eThe fruit is destemmed without crushing, preserving plenty of whole berries during fermentation. After an average of two weeks on skins, with hand-plunging twice daily, the wine is transferred to older French oak puncheons for 12 months of maturation. The result is a vibrant, beautifully layered red, combining bright red fruits and delicate spice with savoury depth and fine tannins.
