Inspired by the Italian Vin Santo style this wine is crafted from Pedro Ximenez grapes hung and dried in bunches from the rafters of the rusty old iron sheds of the Barossa.
From the trickle of juice gathered from these shrivelled grapes comes this wine showing rich, luscious dried apricot and nut characters.
This is not a wine to rush. Take your time and allow it to impress you with the sweet complexity that further develops in the glass.
