11 months spent maturing in 30% new Cavin & St. Martin French oak barriques (fine grain, 36 months' ageing, medium toast). A magnificent exhibition of scents, including stewed fruits, liquorice, charred wood, and delicate spice notes. With red currants, tart raspberry, and white pepper, the taste is very intense. A smooth finish is created by the flawless blending of oak and tannin.
